Mornings are what you make of them!

There is just something about waking up bright and early and going to the beach that makes my days just go by so much easier. Now you would think that it would make me extremely tired. Nope, not me. Its the feeling of aaahhhh. Its so quiet you can actually hear the water moving, the wind, the birds everthing. There are no kids throwing sand, no worrying about if someone is drowning, and no sand in my bathing suit.
The colors every morning are so different too! Oh and the wildlife is amazing! This particular morning we saw stingrays, sharks, horseshoe crabs, and of course the oh so favorite flying rats (seagulls.)


Yeah, I said we...the oldest decided he wanted to come with. Which is perfectly fine with me, means a great nap later! =) He thought the sun coming up was the greatest thing since sliced bread! He acted like he never knew that it actually did that! Add the animals and it was easily his best day ever!

Lastly to end my wonderful serene morning I had my camera on a tripod pointed in one direction. Its on a tripod, pointed towards those rocks there its not exactly going to take a picture in any other direction. Well, this man whom I so kindly watched his things for while he was on a run decided that he was invincible to the camera. Or did he? =) He jumps on the rocks and just starts stretching! HA! I waited for his odd timing and placement stretching, but he kept it up! SO, I snapped some shots! Well buddy your there, you saw me, you saw my camera, and now I have your picture. (I gave him a card) Don't get me wrong it made the sunrise THAT much better!  
I do wish that I could go every morning. But getting up that early does sometimes sitnk! I need my beauty sleep! Hope everyone enjoys their mornings, and if you get the chance go see a sunrise, its more soothing than you think! It really makes you appreciate your surroundings! ENJOY!

Im calling these Easter Nests

These are a great drop cookie! Very easy and Very good! Some people call them Haystack cookies, but I am calling them Easter Nests! Because I can! My grandmother used to make these, they are delicious! You can use Butterscotch morsels or chocolate whichever you want! You can also add nuts, raisins, anything, use your imagination! Here's the recipe: 

What you need:
     wax paper
     11 to 12 ounces of  semi-sweet morsels or butterscotch morsels
     1/4 cup creamy peanut butter
     2 cans (5ounces each) of chow mein noodles

Directions:
1) Line baking sheets with wax paper
2)  microwave morsels in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in peanut butter until well blended.
3) add chow mein noodles to morsel mixture; toss until coated. Using ice
cream scoop that measures about 2 rounded tablespoons, scoop and drop onto
prepared trays then immediately shape into nests. Refrigerate until ready to
serve.

If you want to be a little creative....get some nest eggs! This time of year there is so much easter candy out there you can find tons of little eggs, especially chocolate ones, or even jelly beans would work. I used my favorite! The cadbury mini eggs! Be careful these are highly addictive!

Apple Fritters

These little puppies are amazing! Super easy to make and better than any other fritter I have tasted! This is a new favorite in the house! As they were described by the other half as "holy mother of all things delicious." Enjoy!

White Chicken Enchiladas

Whats for dinner tonight? Check this recipe out! White Chicken Enchiladas... Its a little time consuming, but easy, and absolutely delicious!! To make mine, I did it like a lasagna, layer the meat and tortillas, took a lot of the time off, and still delicious, not as pretty, but tasted the same! If you want to roll the enchiladas, you have to fry them, if you microwave them they split, found this out the hard way!
